A name discovered among casks

While searching for oak, the Summerhall team encountered five distinctive casks in a Highland warehouse, stacked like a hen coop. The 2022 brochure tells how that discovery helped give The Broody Hen its name.

The inaugural blend drew on American oak, including first-fill and second-fill bourbon casks, with a softly sweet profile and a hint of spice in mind. The story is one of considered selection. A private cask conversation looks beyond a finished bottle to ask what kind of whisky you would like your own chapter to become.

Armagnac cask finish

Armagnac cask finish

An influence rooted in Gascony: caramel and fruit meet smoky wood and sweet vanilla in the brochure’s Armagnac finishing example.

Shiraz cask finish

Shiraz cask finish

Blackberry, waffle cone and pecan on the nose; ripe plum, clove, warm spice and charred oak on the palate.

Sherry cask finish

Sherry cask finish

A classic finishing direction with a rich, nutty character, sherried citrus and warm, sweet notes.

Finishing: the next chapter in flavour

A second maturation can build another layer of character on the aromas and texture developed in bourbon oak. The brochure describes 6–24 months as a typical finishing example.

This is not an investment return period or the total maturation time. Timing and suitability depend on the spirit, cask, sample evaluation and individual proposal. Tasting descriptions do not guarantee the outcome of every cask.

  • Cask identity, ownership transfer and warehouse acknowledgment
  • Storage, insurance, bottling, transport and taxes
  • Restrictions on disposal, movement and brand-name use

Can I enquire about personal ownership or a branded bottling?

Tell us whether you are exploring personal ownership, a future bottling or a branded product. The available scope and terms will be reviewed for your enquiry.

Is this the same as the Korean aging project?

They are separate projects. This page introduces Scottish casks and the brochure’s finishing examples. Projects involving Korean spirit are discussed separately, including the resulting product’s origin and category.
